Chiangmai or issan will be a ideal place for slow pace and relax life. But of course still need a job to feed the family.

Getting a job one need a work permit and those on one year visa, retired visa or marriage visa, you must every month show proof of amounts in your Thai bank account and money can only remit from overseas. Every 90 days you need to report and submit documents to the immigration office.
Same apply when buying a condo in Thailand with money remit from overseas and a letter from the your Thai bank manager.
Personally, I would rather go on a regular trip than staying or retired in Thailand. Still cheaper & convenience and less headache of visa run.
